The stainless steel electric drop-in Halo Heat Hot Food Well Unit can be used in either of those situations. This 4 inch deep unit holds three 12 inch x 20 inch full size pans, which aren’t included. It’s thermostatically controlled, and has a setting range of 1 to 10, with a heat indicator light. The control is attached to the well by water-resistant 36 inch tether, and can be flush-mounted to a counter-top. No water is added to the well, so steam burns never happen, lime and scale don’t build up, and no drain is necessary.
