The True TSSU-72-08-HC food prep table is equipped with a guided airflow pattern in its refrigeration system, ensuring uniform temperatures in both the food pan area and the cabinet interior. Operating with a forced-air design, this system maintains product temperatures between 33 and 41 degrees Fahrenheit, allowing operators to set and adjust the level according to specific applications. Conveniently accessible from the back, the condenser slides out, making components easily reachable for maintenance.
To enhance system efficiency and prolong the machine’s lifespan, the compressor fan features a unique self-cleaning mechanism. Upon startup, the fan reverses for 20 seconds, blowing air across the condensing coil to keep it clean and free from dust buildup. While this self-cleaning feature improves overall operation, routine maintenance remains necessary for optimal performance.
Utilizing eco-friendly R290 hydrocarbon refrigerant in a factory-engineered, self-contained capillary tube system, the True TSSU-72-08-HC prep table demonstrates a commitment to sustainability. The top pan area includes eight sixth-size pans, each measuring 4 inches deep. Additionally, it can accommodate 6-inch-deep pans (sold separately). To safeguard ingredients from contaminants, a stainless steel hood and lid assembly can be pulled over the pan area. Adjacent to the pan rail, a spacious compartment is available for small equipment and dry ingredients, providing a versatile and efficient food preparation solution.
