The Matfer Bourgeat Exopan Steel Fresh Fruits Tart Mold is a high-performance steel mold with fluted edges, designed to create traditional fruit filled tarts. The bottom of the mold has a raised center, producing a special shaped shell with an indentation that can be filled with various fresh fruits, cream, and chocolate fillings. Manufactured in France, this mold is made of Matfer’s Exopan material, a fine steel with a nonstick coated interior and a protective enameled exterior, that are PFOA free. Exopan combines the quality of cooking in tinplate with the benefits of a nonstick surface, contributing to overall development of product color during baking. Its nonstick surface eliminates greasing resulting in a clean release during depanning. The protective enamel ensures durability that will withstand heavy use in professional kitchens. Freezer and oven safe, Exopan molds have a resistance to temperatures ranging from -4F to 482F. Available in a choice of two sizes; each is sold separately.
